We decided to go with adjustable shelving. It cost more, but has the advantages of adjustment and allowing air to flow.

The doors are masonite with 1x2 sides and 1x4 top, bottom and middle. The plan was to use 1/2" insulation board, but it proved too flexible. 3/4" rigid foam was used. The rollers were mounted on aluminum stock attached to the top rail of each door.

Both audition walls were covered with batting after spacers were attached to the bottoms to make them more stable.
Next comes the pieces of fabric to be assembled.
